The olives on our estate in the Ballestera Valley usually begin to change colour between 20 October and 10 November.
By watching the olives very carefully we can detect the first signs of them turning purple and burgundy. This indicates that the ideal moment for harvesting them has arrived. They are ready to give up their premium extra virgin oil.
With the aid of manual shakers we strip the olives from the trees. Afterwards, we separate them by hand, treating them as if they were grapes, then we carefully place them into small crates to be transported to the oil press.
